Three Sisters Tacos: Black Bean, Corn and Zucchini

Native American tradition states that these three staple crops not only replenish the soil when grown together but they also make a complete protein source, with all of the essential amino acids. Three Sisters Tacos: Black Bean, Corn and Zucchini

Tacos can be veggie friendly and satisfying. Forget boring tacos-these are filled with beans, veggies, and whole grains, and they are guaranteed to satisfy all your cravings.

Ingredients:

  • 1 Tbsp olive oil or avocado oil

  • 1 medium zucchini, chopped

  • 1 cup frozen corn, thawed

  • ½ medium onion, sliced

  • 2 Tbsp jalapenos, chopped

  • 1 cup black beans (rinsed and drained if canned)

  • 1 clove garlic, minced

  • 1 tsp cumin

  • 1 tsp chili powder

  • 8 corn tortillas or 4 flour tortillas

  • 1 medium avocado, sliced

  • Fresh cilantro

  • Lime juice

Instructions:

  1. Add oil to a medium skillet, then add the zucchini, corn, onions, and jalapeños and saute for about 5 minutes, or until vegetables are soft and slightly browned.

  2. Add the black beans and spices, and continue to sauté for another 3-4 minutes, or until fully heated.

  3. Divide the black bean mix evenly among the tortillas, and garnish with sliced avocado, cilantro, and lime juice.

  4. Serve immediately, or cover and refrigerate
