Three Sisters Tacos: Black Bean, Corn and Zucchini
Tacos can be veggie friendly and satisfying. Forget boring tacos-these are filled with beans, veggies, and whole grains, and they are guaranteed to satisfy all your cravings.
Ingredients:
1 Tbsp olive oil or avocado oil
1 medium zucchini, chopped
1 cup frozen corn, thawed
½ medium onion, sliced
2 Tbsp jalapenos, chopped
1 cup black beans (rinsed and drained if canned)
1 clove garlic, minced
1 tsp cumin
1 tsp chili powder
8 corn tortillas or 4 flour tortillas
1 medium avocado, sliced
Fresh cilantro
Lime juice
Instructions:
Add oil to a medium skillet, then add the zucchini, corn, onions, and jalapeños and saute for about 5 minutes, or until vegetables are soft and slightly browned.
Add the black beans and spices, and continue to sauté for another 3-4 minutes, or until fully heated.
Divide the black bean mix evenly among the tortillas, and garnish with sliced avocado, cilantro, and lime juice.
Serve immediately, or cover and refrigerate
